Happy Monday everyone!
I feel as if it has been a while since I have made a weekly highlights and I am super excited to bring it back and show you guys all the things I have been loving this week! Let’s get started, shall we?
I got this little gem for Christmas from James, and to be honest, I really didn’t think it would actually grow. Only after two days of watering it, however, it started to sprout! After a year, you just plant the whole cube in a pot, the cube will disintegrate to make a fertilizer, and you’ve got yourself some nice flowers!
I hope these continue to grow as beautifully as they are growing now.
1 bowl banana bread, people. UNO BOWL (I don’t know what bowl is in Spanish ha). This was ready to bake in a jiffy and tasted oh so good. Slathered with Sunbutter, it just does not get any better. Follow this link to Cindy’s blog, Cookiesnchem, for this delicious recipe!
On new year’s eve, my friends boyfriend brought over some juices from the grocery store he works at, and I fell in love with this little mix. The ingredients are simply carrots, apples and lemon, that’s it! It has a unique taste, but I quickly got used to it and jugged it down super quickly.
Although I don’t want to self promote myself that much, it would simply be wrong for me not to mention this apple pie baked oatmeal in my weekly highlights. I made this baby twice and had it almost every single morning! I am loving this recipe so much!
After James got a cocktail shaker for Christmas, we like to think that we are now bartenders. We have been buying some syrups, like the angostura bitter pictured above (which adds a cinnamon-like taste to drinks), and a bunch of juices to make delicious concoctions. It is so fun to make and as fun to drink!
The recent weather
We have been getting this little bit of warm weather recently and I am not opposed to it at all. I got to walk outside without a scarf yesterday so I am feeling quite good! The sky was also so pretty, and we got to glimpse the sun, so my spirits are feeling a little lifted.
Okay, so I haven’t used it yet, but the mere fact of me holding this in my hands is an instant favorite. A cookbook that I absolutely adore, the Thug Kitchen cookbook, asks for this ingredient a lot, now that I have it in my possession, my recipe making options has just greatly expanded! This stuff smells like a smokehouse in a bottle, it is simply incredible.
Spring veggie bowl with curry and lime sauce
I decided to make this before school started taking up all my time, since it is a bit of a time-consuming recipe, but ohhhh man. The tofu was marinated in a sweet ginger-citrus marinade and baked in the oven. The red sauce was homemade, with a mix of lime, red curry paste, soy sauce, peanut butter, ginger and all that delicious stuff. I then grilled up some veggies and cooked some rice noodles and had the best supper ever.
