Nothing makes me happier than summer; the long sunny days, the hot and humid weather and a nice fruity drink in one of my hands. These types of summer evenings are just meant for friendly reunions on an outdoor terrace.
If the recent weather wasn’t inspiration enough, I was also inspired to make this recipe after visiting one of my favorite bars in Montreal, called La Distillerie. They make the most amazing and creative drinks in big mason jars. It’s a small place with a really fun ambiance; I have never failed to have a good time at this bar.
So, one night, my sister and I gave ourselves the tasks of making an awesome cocktail. We had ingredients lying all over the kitchen, and my sister was scribbling down on a small piece of paper everything being thrown into the blender. We argued on certain ingredients and agreed on others, and finally we came up with what I like to call the Piña Colada 2.0.
Picture yourself on a beach, turquoise water touching your toes and the soft sound of waves resonating in your ears. If you are like me, you’re most likely holding a drink in this moment, and that drink is this one. With it’s fruity flavors of mango and pineapple, hinted with coconut and an aftertaste of rum, this drink is sure to remind you of tropical getaways and warm summer nights.
If you’re no where near a beach or your imagination cannot even fathom the idea of this beautiful paradise, then make the drink at home and sit on your balcony with some friends during happy hour. The feelings you will get will (almost) be the same.
Piña Colada 2.0
Makes 2 large drinks
2 cups pineapple juice
1/3 cup frozen banana slices
1 Ataulfo mango (cut in cubes)
1/2 cup coconut milk
2 tsp vanilla extract
2 tsp icing sugar (optional, depending on taste)
4 oz rum
1 cup ice
mint (optional, for garnish)
1. Throw all the ingredients into your blender and blend!
