Hey there friends!!!
I feel like it has been way too long since I have spoken to you all and it’s actually only been a week. School got the best of me, guys, I was living and breathing education and had no time for my poor blog! I have so many ideas and posts lined up that it was upsetting for me to stop for a little while, but that is life!
On a happier note, it is now officially March break for me!! WOOHOO!!! I walked out of class today floating on a cloud of happiness knowing that I was done school for a week!
I am leaving Saturday morning for Oklahoma to see James’ family and I am so, so, so excited. Does anyone else get super excited about airports? The fact that you are rolling your luggage around and feeling that excitement of taking a plane and going somewhere is something I can never get tired of.
Although, I do have to mention, I am bad with airplanes. Like, really bad. I’m the type to hold onto my seat for dear life when the plane takes off, because I am just very convinced we won’t make it.
Another super exciting thing is that I will be able to go to the airport in my vans and my spring coat because it’s warm in Oklahoma!! The idea of not seeing my boots or coat for a good 5 days is something I am entirely too happy about.
On a very random note, I also wanted to share this blueberry mug cake recipe by Kirbie’s Cravings with all of you. I had this the other night and was so impressed by the texture of this mug cake! I have to admit the picture I took is not so cute, but I was almost done eating it when I decided to snap it! You will definitely find nicer pictures on Kirbie’s blog!
A lot of the times I find the texture of mug cakes, especially the healthy ones, to be very off. The one I made was nothing like that!! I thought some of you might be happy to try out this recipe, so I hope you get to make it, it is delicious!
Now, the real reason for this post, after getting entirely too giddy about being back here with you all, is to mention a recipe I have recently revised and perfected!
A couple months ago, I posted a recipe for stuffed peppers and upon wanting to remake them the other night, I noticed there were a TON of mistakes. It was slightly embarrassing, I have to admit, and I am seriously questioning what was wrong with me the first time I wrote that recipe.
Not only have I corrected the mistakes, but I have made the recipe 100x times better, thanks to my mom’s amazing capabilities in the kitchen! These stuffed peppers are so delicious, it is definitely worth it for me to re-share it with all of you!
These are so filling and tasty, they make the perfect make-ahead lunch or even supper!
I am hoping to be back here soon, although with my trip I am not sure I will be able to make a post in the next couple of days. I wish you all a great week!!
