What I ate Wednesday: Healthy Eats After an Over-Indulgent Weekendfeatured

Hey Hey it’s What I ate Wednesday!! 

After my weekend spent ice fishing and eating ALL the food, I was itching to get back to my weekly routine and to start eating the foods I usually eat!Fish Cookies

I, of course, do not regret the 10 cookies I had one afternoon, or the handfuls of chips I mindlessly shoveled into my mouth, or the Nanaimo bars I couldn’t even try to resist. Oh, no, I would do it all again. But of course, once the bloating set in, I was a little excited to start eating healthier again.

For breakfast on Monday, I cooked up a quick cooking batch of steel-cut oats, which I topped off with milk, chia and hemp seeds, a cut up apple and maple syrup. It was super yummy, but not very filling. Am I the only one that finds oatmeal to not be very filling?

I luckily ate breakfast fairly late, so lunch wasn’t too far away. I gobbled down a delicious egg-less “egg salad” sandwich made with tofu! I had that with a side of roasted chickpeas with veggies and dip. This was so yummy and satisfying.

The recipe for the tofu sandwich mix will be posted soon! I promised to some of you, about 1-2 weeks ago, that I would be posting a dessert tofu recipe. I have not forgotten! I am planning a tofu round-up post and these two recipes will be in that post.

I spent the afternoon at Starbucks with a friend to study for my Clinical Nutrition exam coming up on Thursday (tomorrow). Before leaving, I grabbed a clementine to satisfy a little hunger pang.Clementine

Once at Starbucks, I ordered a latte but they ended up giving me their new Latte Macchiato. I didn’t exactly want that latte since it is made with whole milk and can get pretty heavy, and it didn’t have the taste I was craving, but I drank it nonetheless (and obviously enjoyed it)!

My friend got to Starbucks and gave me an orange lemon poppy seed muffin she had baked. I didn’t snap a picture of it, but if you are interested, you can check out the recipe at Sally’s Baking Addiction! She subbed half the butter for applesauce, and they turned out great. These muffins were pretty dense so I nibbled on it throughout the afternoon.

Once home, it was supper time, and my mom had cooked up a great batch of beef & macaroni! At this point, I wasn’t exactly starving, so I had a bit of a smaller portion, but I enjoyed it all the same.

A little later in the evening, I did a yoga workout on Youtube that I was seriously not expecting to be so hard. I did 30 minutes of the 1 hour video and could not go on any longer. I was looking for a sweat-inducing yoga session, and boy did I ever get it!Yoga

Post yoga and studying was done with this little bite of Amy’s toffee (BEST DESSERT EVER) and a super ginger tea from David’s tea.

On that note, it is excessively late and I need to either get back to studying (which is not a good idea when considering the time -1:58 am currently) or hit the hay. I think I will bring my notes in my bed and hope for a little last minute cram sesh (haha, who am I kidding, I am going to bed).
