What I ate Wednesday: A Look Into my Last Day of Breakfeatured

Today is the first time I ever participate in a WIAW post, so I am super excited! For some reason, it took a while for me to understand what exactly “linking up” meant and how to join in on these posts, but I think I am getting it now… Only took me 6 months and help from Jacklyn, who kindly explained it to me.

I will take you along my last day of break, which was actually last Thursday, and all the things I did that day! (spoiler alert: I hardly moved all day).

I woke up around 10 am, and had a light breakfast so I wouldn’t be too full for  lunch. I have a hard time breaking away from the routine of eating lunch between 12-1, so I didn’t want to eat too much!

The muffin was a recipe I decided to adapt from a cookbook, I subbed all the fat for chia seeds and water, and the sugar for applesauce. I also changed the flour for chickpea flour. The muffins ended up having a weird chickpea flour aftertaste, which surprised me because Jacklyn’s chickpea flour muffins didn’t have that taste at all. I was surprised that after all my substitutions, the texture was still very muffin-like. I will slather these with Sunbutter from now on, to mask that slight aftertaste.

The smoothie was a blend of strawberries, mango, plain Greek yogurt, maple syrup and water.

I enjoyed this breakfast while watching my go-to show of the moment, Once Upon at a Time, which is a little cheesy at times, but I just love the way they integrated all the Disney characters in this show.

Lunch was shortly after this, and I have to admit that I didn’t move from this position until it was lunch time. My mom works from home, so we had lunch together!

For dessert, I had the last cookie that my mom’s friend made, they were SO amazing. I’ll dream about these guys forever (…or I could just ask for the recipe).

Not too long after lunch, it was time for me to stop being lazy and get moving. I took a little selfie of my workout clothes because I am obsessed with this new shirt that I got for Christmas from James’ step mom. 

As you might notice, I am holding my Ipad, because what is a workout without watching your favorite episode while doing it?!

If you were curious, my workouts recently have been inspired from Jacklyn’s post where she gave a workout that apparently made the time fly by. I was a skeptic, I admit, but I really do love the way it is so diversified, and the time does fly by! I have been changing up the exercises between the 0.5 mile run based on what body part I want to work out that day, and so far it is working for me!

After my workout, I decided to make some granola bars in preparation for school. I used my own granola bar recipe, which I posted a while back. I don’t want to brag or anything but it is probably my favorite granola bar recipe ever, I just love how they hold like store-bought granola bars. I actually discovered while making them that, in my post where I shared the recipe, I forgot to indicate how much oats to add, and a friend of mine had previously made them and found them quite sticky. Well, I hope that my friend is the only one who made them haha, what a terrible mistake on my part (P.S., it’s fixed now šŸ˜‰ ).

I spent a part of my afternoon reading the Clockwork Prince and cuddling with Sasha. In this picture, Sasha was lying on top of my book, making it hard for me to read because of her cuteness overload (by the way, this book is getting INTENSE).

Supper was one of my family’s favorite meals, black bean quesadillas! Served with Mexican rice and salad. The picture may seem as if I didn’t have dressing in my salad, but have no fear, dressing was enjoyed with this little salad.

For dessert, I had a piece of Cindy’s banana bread, half of it au naturel and the other half with sunbutter.1 bowl banana bread

After supper, I made my way to James’ apartment and grabbed a clementine before leaving my house, I was missing a little sugar in my system and tried to bust that craving.clementine

The sugar craving was not satisfied, of course, so I had a piece of maple fudge at James’ and the craving was curbed!Fudge

We said goodbye to an amazing break with a nice cocktail to finish off the night.

I’m so glad I finally got to share a day of eats with all of  you! I have been reluctant for different reasons, one of them being that I had no idea how to join the WIAW posts. The other reason was because I was scared that my day of eats would become skewed because I knew I would be sharing them with everyone. Did I want people to know I don’t eat perfectly or sometimes eat too much sugar?! Not really, but I never wanted to come up here and start eating way healthier for a day to show you all how perfect and totally balanced I am.

So, this is a real day of eats, I look back and feel a little guilty when I realize how little veggies or fruits I ate that day, but then I realize how ridiculous of a thought that is. A healthy diet is all about variety and balance, and I know that my veggie or fruit consumption will vary from day to day!
